Red White and Blue Burger
Fire up the grill, and sink your teeth into this mouthwatering twist on an Independence Day favorite. Skip the usual toppings and wow the crowd with grilled sweet onions and red bell peppers, plus a generous helping of fresh blue cheese.
Start by combining a pound of ground sirloin, with a pound of ground chuck. This should make 6-8 burgers depending on size. Just don’t overwork it! Create patties slightly larger than the buns, and use your thumb to create an indent in the center. Set aside.
Slice 2 large red bell peppers and 1 large sweet onion into 1-inch strips and combine in a bowl. Drizzle on a tablespoon of extra virgin olive oil, and season with salt and pepper to taste. Stir well and pour your veggies into a grill basket. Place the grill basket of veggies on the hot grill to start cooking slightly ahead of the burgers.
Season your burgers with salt and pepper, and place on the grill alongside the veggies. Set the timer for 5 minutes, then give the veggies a good stir and flip your burgers to the other side. Grill for an additional 5 minutes or until done. Burgers should be cooked to an internal temperature of at least 160°F, and veggies should be softened but still slightly firm, and have a nice char. Add a slice of blue cheese (or a scoop of crumbled blue cheese) to the burgers the last minute of cooking. Serve your burgers with melted blue cheese on soft and crusty Ciabatta rolls, topped with grilled red peppers and onions, and a side of blue corn tortilla chips.
Red White and Blue Cupcakes
The colors of the American Flag shine in this spectacular yet simple semi-homemade dessert, perfect for celebrating Independence Day! Start by placing white cupcake liners in a cupcake-baking pan. Preheat your oven and prepare white boxed cake mix according to package directions. Divide the batter into three separate bowls. Add red food coloring to the first bowl, blue food coloring to the second, and leave the third white. Start by adding a spoonful of blue batter in each cup to form the first layer. Next, spoon the white batter on top of the blue, and then add the red last, so each cup is 2/3 full. Lightly tap the sides on the pan to allow the batter to evenly spread and smooth out. Bake as directed on the box until done, and cool on a wire rack. Allow your cupcakes to cool before icing with vanilla frosting. Then top your frosted cupcakes with festive red, white and blue sprinkles, take a bite, and watch the fireworks happen!
